Ingredients
- 2 Tbsp.
plus 1 teaspoon olive oil, divided
- 2 Tbsp.
sunflower seeds
- 2 Tbsp.
pepitas
- 1 Tbsp.
sesame seeds
Kosher salt and freshly ground black pepper
- 2 Tbsp.
red wine vinegar
- 1 Tbsp.
pure honey
- 1
(5-ounce) package arugula
- 1 cup
(5 ounces) fresh sweet cherries, pitted and halved
- 1
(3-ounce) log goat cheese, broken into chunks
Directions
- Step 1 Heat 1 teaspoon oil in a small skillet over medium heat. Add sunflower seeds, pepitas, and sesame seeds. Cook, stirring occasionally, just until starting to color and smell fragrant, 2 to 3 minutes. Remove from heat and season with salt; cool completely.
- Step 2Whisk together vinegar, honey, and remaining 2 tablespoons oil in a bowl. Season with salt and pepper. Add arugula, seed mixture, cherries, and cheese, and toss to combine. Serve immediately.
