The Ultimate Grilled Cheese with Tomato

Just because a sandwich is simple doesn't mean it can't be stunning.

First, ingredients: You'll want to use the ripest, sweetest, most flavorful heirloom tomatoes you can get. This is a summer sandwich. Next, soft brioche-style bread is important. It's the best thing for grilled cheese. And you don't want just any old cheese. Save the Cheddar for burgers and instead use Fontina. It's a mild white cheese that melts incredibly well. 

Next: technique. You might be tempted to use butter when frying the bread. This is wrong. Mayonnaise is what you want. Don't love the flavor of mayonnaise? You won't taste it. It's true! 

The mayonnaise will cover every inch of the bread, creating the perfect crispy, toasted exterior, but without any mayo flavor. The extra butter in the pan adds a little more flavor and keeps the bread from sticking. 

End result: A grilled cheese for the ages, with lots of tomato flavor, and plenty of ooey gooey cheesiness.
