Maple-Bacon Popovers

Popovers are a classic breakfast dish, first appearing in print in the mid-19th century. They should be served immediately, so wait to bake them until you’re ready to sit down and eat.

Ingredients
- 1 cup
whole milk, at room temperature
- 3
large eggs, at room temperature
- 1 tsp.
pure vanilla extract
- 3 Tbsp.
dark maple syrup, divided
- 1 cup
all-purpose flour, spooned and leveled
- 1/2 tsp.
kosher salt
- 3 Tbsp.
unsalted butter, melted and cooled slightly
- 6
slices cooked bacon, chopped

Directions
- Step 1Whisk together milk, eggs, vanilla, and 1 tablespoon maple syrup in a bowl. Whisk in flour and salt. Whisk in butter. Fold in bacon. Let batter rest for 15 minutes while preheating oven.
- Step 2Place a popover pan in the oven and preheat to 425°F. Once oven has preheated, remove the pan and lightly grease cups. Transfer batter to pan cups, dividing evenly.
- Step 3Bake 15 minutes. Without opening the oven door, reduce temperature to 350°F. Bake until golden brown and puffed, 14 to 16 minutes. Lightly brush tops with remaining 2 tablespoons maple syrup. Serve immediately.
